Recommended Applications This Smoked Black Peppercorn is a great addition to grilled meat, in Bloody Mary’s, salsa, soups or on vegetables. It can also be used as a finishing pepper or added to seasoning blends or rubs. This versatile condiment brings a smooth smoky flavor to any dish, as it is naturally smoked over hickory wood.
Basic Preparation Any spice is best to use promptly after it has just been ground. Another way to add the whole peppercorn flavoring is to place them in a cheese cloth bag and let simmer in a stew or soup, remove the bag before serving. Also notable, pepper looses its flavoring during extended cooing periods, so it is best to add towards the end of cooking.

Peppercorns are actually the fruits of a flowering vine in the Piperaceae family. The green, wide-leafed vines grow long tendrils where cylindrical clusters of the berries ripen. The fruits are small containing a thin skin, very little actual fruit, and a single large seed. The fruits are picked at varying degrees of ripeness depending on the strength and type of pepper desired and then processed accordingly.

Black, white, and green peppercorns are all the same fruit but treated differently.

  • Black peppercorns are dried, unripe fruits that have been cooked.
  • White peppercorns are only the seeds of the dried, ripe fruits.
  • Green peppercorns are dried, unripe fruits that been preserved through flash-freezing, curing, or brining in order to preserve their color and flavor.

Black pepper can be used with pretty much any dish. Starting from the breakfast, with the mouth-watering egg bullseye which even the single guys can make, to the elaborate dinner dishes that are the pride of the womenfolk. Always crush the whole pepper to experience the full-on taste. Pepper can be powdered with an electric grinder and it is recommended to store quantities of about 100gm for easy access while cooking and as you finish the powerful black powder, grind another 100gm. You may also want to keep pepper seeds in an attractive pepper grinder on the dining table. Stay away from the salt though….
