- Cumin seeds 1/2 cup
- Coriander seeds 2 tablespoons
- Cloves 1 tablespoon
- Black pepper 2 tablespoons
- Cinnamon 15-20 sticks of 1 inch
- Black cardamoms 8-10
- Green cardamoms 15-20
- Nutmeg 1
- Mace a little
Preparation Method
Step 1: Take a pan and lightly roast the whole masalas one by one: cumin seeds, coriander seeds, black pepper, cloves, small cardamoms, big cardamoms, nutmeg, cinnamon and mace. Step 2: Mix all the spices, let cool and grind to a fine powder. Step 3: If required, sieve. Store in an airtight jar.

“Garam” is the “hot” in “hot spice blend,” though this refers to the pungency of the mixture as opposed to the heat from cayenne pepper.
